This buzzing bonfire of a restaurant is dedicated to the art and craft of cooking in-house butchered meat: below the small, ground-floor taco bar lies an expansive room featuring a theatrical open kitchen with a wood-fired grill and clay oven. Bag one of the counter stools and watch in wonder as the chefs prepare your food over fire.

The name refers to the kitchen’s commitment to tempering the meats, whether that’s Essex beef, Yorkshire pork or Welsh lamb – a practice which ensures the fullest flavours. Then there’s the quality; all beef is rare breed, grass-fed and sourced from UK farms with high welfare practices. This sourcing extends to the rest of the menu too, from fish to vegetables and drinks and, what’s more, Temper also operates a zero-waste policy, so anyone concerned about its eco credentials can dive in with abandon.

Diners can take their pick from a high-octane cuisine-hopping menu that runs from must-order blowtorched mackerel tacos freshened with sweet white miso and mashed avocado to little bowls of Thai-style larb combining roasted rice with ‘burnt ends’ for a spicy clash of textures. The prices of the beef cuts are a little off-putting, but this is a steakhouse and it is excellent quality. We recommend ordering the full quota of sauces – beef fat béarnaise, green sauce, chipotle sour cream, Korean BBQ, and pepper sauce – and finishing off with a gooey-centred cookie, baked in a cast-iron pan and topped with fior di latte ice cream.

Well-considered cocktails, such as the Irn-Bru Spritz and pineapple Negroni kick off the drinks list, but it’s mezcal flights served in traditional clay copitas and a vast selection of tequilas that dominate. There’s also a healthy selection of wines from around the world. Enthusiastic and committed staff seal the deal at this thoroughly modern BBQ bunker.

Chef Neil Rankin made his name with Smokehouse as well as a well-received meat cookbook and he’s expanded on the barbecue theme with Temper. This Mexican-influenced Soho outpost is the original location for the small but expanding group (there are also Tempers in Covent Garden and the City), ambitiously located a few doors up from Hakkasan spin-off Yauatcha and round the corner from bun-specialist Bao.

Temper more than holds its own against its illustrious neighbours, however. The small foyer at street level gives no indication as to the proportions of the dining room below, a huge basement space focused around a central 6m-long fire pit, enclosed by an eating counter, with tables and chairs radiating around and private booths hugging the walls.

Snacks, chicken wings and tacos with fun fillings (cheeseburger, smoked goat, haggis) form the small-plates intro to the main event of big plates of meat, cooked in full view of the open fire: 500g T-bone, 500g rib-eye on the bone, 500g Porterhouse or 600g rump.

If your appetite doesn’t stretch that fire, there are carnitas of goat, pork, beef, beef sausage and beef skewers. Fish eaters get wood-fired market fish with tortillas, chipotle sour cream and salad, but really, you’re in the wrong restaurant.

Vegetarians fare a little better with cauliflower from the wood oven or Korean jackfruit and goat’s cheese tacos but, again, this is not really the place for anyone except the most carnivorous – and anyone who doesn’t mind shouting over the very loud acoustics.

Tequila and mescal form the bedrock of the drinks menu – the house Momma’s Margarita is excellent – while cocktails such as the Irn Bru Spritz or beetroot-based Sex & Violets are every bit as full-on as the cooking. Otherwise, there are five beers (including three from Shoreditch’s Redchurch brewery) and some creative non-alcoholic drinks which should help calm the palate from the onslaught of savoury flavours.

Rankin worked in fine dining kitchens under the likes of Michael Wignall, Gary Rhodes and Bruce Poole before catching the live fire cooking bug at Jamie Oliver’s Barbecoa restaurant. After a stint as head chef at Pitt Cue Co’s original Soho restaurant, Rankin opened Smokehouse restaurant’s in Islington and Chiswick. These were well-received by the critics, but what really shook up the market was Temper, an enormous and irreverent Soho restaurant opened in 2016 which barbecues whole animals for its eclectic, Mexican-inspired menus. Two more Temper-branded restaurants have followed with different themes, including a Covent Garden site that specialises in lesser-known US pizza styles and vermouth-based drinks.

Tasty Steaks but dark and noisy.

A fairly simple steak/ meat based menu, which if that is what you want, is done well and is tasty.

The specials selection at 7:15 had already ran out of the fillets and the smaller sirloins, so we got 3rd choice.  To be fair to the restaurant they gave us bigger sirloins than ordered because of this and charged for the smaller one.

I'm more of an older demograph now, so it was too dark and noisy for me...  struggled to hear the conversation and menus need to be read by iPhone torch.  But those of a younger and trendier demograph might see that as a positive.

The two of us with 2 bottles of wine spent a little over £100, so not bad value for money.

Tasty food in a buzzy setting
Temper Soho is a great spot for dining with friends or for starting your night out if you're looking for a buzzy restaurant with a good atmosphere. Food highlights include the cheeseburger taco, the crab tostada and the smoked beef flatbread. Definitely get all of the sauces. And leave room for the baked cookie dessert which is a real sweet treat.

Amazing food, counter seats are a must!
I recently went here on a date night, having wanted to go for ages! The restaurant did not disappoint. The only slight flaw was the waitress got one of our orders wrong. But other than that, it was fabulous. We were greeted by a very lovely hosted, brought down to the best view in the house (the counter). i had a fab Irn Bru cocktail (I'm Scottish - I love it). The food was fab and the desserts even better. Believe the hype - it is definitely all true.

Cheeseburger tacos. Say no more.
Just crowned "3rd best restaurant in London right now" (Time Out), Temper had in fact been on my wish list for some time. Ever since a throwaway Grace Dent post on Instagram mentioning the delicious wine and cheeseburger tacos my food radar was buzzing, then a glowing Jay Rayner Observer review absolutely sealed the deal. Unfortunately I didn't get round to booking until last month, and in the interim the restaurant featured on BBC's Celebrity Masterchef - which our waiter told us has increased their daily bookings at least 300%. You could tell. We arrived at 7pm (early for Soho, I thought) and the place was already very busy and noisy. Turns out it is just very noisy all the time. After feeling somewhat pressured by our lovely waiter to get our order in, we watched them turn over those tables, and turn them again - and I think I had my longest ever wait for main courses to arrive. It's a semi industrial space below street level with an open kitchen. You can sit at the bar in pairs, and they have booths for groups up to eight. We were given a four seater table near the entrance which was great space-wise, but we could barely hear each other speak by 8pm (peak customer hour). I didn't mind a bit of shouting, but if we're all doing it, maybe a few cushions are in order? We had the cheeseburger tacos and a taco special (pig cheeks): both were sublime, particularly washed down with two perfect Negronis. After that long wait our selection of main dishes arrived: the well-reviewed smoked meat on flatbread (lamb rump), lamb masala (curry), burnt end larb (astoundingly good), and a few sides. I think the char-grilled meats are better at Blacklock. Everything was good, nothing was great. Except the tacos. Add two rounds of beers (4 total) and our bill came to just over £100. Next time, I'm ordering every taco on the menu, cocktails and dessert. Mezcal please!
