Sandwiched between the animated Grill and the more subdued restaurant, Skylon’s bar is a destination in its own right for those seeking serious liquid refreshment. Bag one of the 50s-style armchairs for a seat overlooking the river, and take in the Waterloo sunset as you sip a Skylon (muddled grapes and ginger, Cîroc vodka, green apple liqueur, fresh lime and apple juice) or one of 10 different Bellinis (the elderflower and peach version comes highly recommended). Upmarket bar food includes scaled-down versions of some of the restaurant dishes, including salmon rillettes with pickled cucumber, crispy duck rolls or scallops with black pudding. None of this comes cheap, but as a starting point for a date or a bit of business, it’s up there with London’s best.
