A Jersey institution, the Ocean Restaurant embodies classic fine dining: just-so service, a labour-of-love wine list and elegant, complex cooking – all in a sublime setting, with stunning views across The Atlantic Hotel’s gardens to St Ouen’s Bay from the blue-on-beige dining room. Following the departure of long-serving chef Mark Jordan, the kitchen is now run by Will Holland (ex-Coast at Saundersfoot), who has swapped bracing south Wales for the balmier climes of Jersey. Locally sourced island produce (especially seafood) is still at the heart of proceedings, although Holland has his own take on all things seasonal. Luckily, the wine cellar’s treasure-trove of fine vintages ins unchanged.
