A mirror image of the creative development kitchen appended to two-Michelin-starred L’Enclume in Cartmel, Simon Rogan’s Aulis offers a “perfect” interactive experience based around an exclusive tasting menu with appropriate wine pairings. This is essentially a road-testing opportunity for newly developed dishes that might eventually find their way onto the menu at Roganic on Blandford Street.
Menus change as new ideas come on stream, and lucky diners can watch as dishes such as buckwheat with chicken liver and pale ale, pork with carrot and nasturtium or dessert combos along the lines of Jerusalem artichoke with malt and verjus are cooked and demystified in front of their eyes.
The all-in cost is currently £195 per head, which not only includes a multi-course tasting menu accompanied by paired wines (selected daily by the chef), but also coffee, service charge and water. Precise details (including the location) are revealed when booking.
