At the top of Birmingham’s Resorts World entertainment complex and with a cracking view, this cocktail bar is more a destination venue than a drop-in. Sky by name, sky by design, it has the look of a first-class airline bar – but without guests having to pay the premium for an upgrade. Dress up for an Asian-inspired adventure in food and drink; kick off with a Tsuchi, an earthy mix of Japanese whisky, ginger, honey and mandarin, before tucking in to toro tartare with wasabi crust, or harissa lamb lollipops with spiced cashews. Alternatively, choose to journey closer to home with a classic Champagne cocktail and then move on to a rare-breed pork belly with truffled white beans and crackling.
