The awarding of a flitch (or side) of bacon to devoted married couples dates back to Chaucer’s time and remnants of the ‘flitch trials’ are still practised hereabouts – hence the name of this “classy” revitalised pub-with-rooms, the latest venture from local resident and celeb chef Daniel Clifford (of two-Michelin-starred Midsummer House in Cambridge). The Flitch is already a local hit with its “great vibe” and sharp cooking from Clifford’s deputy Luke Finegan, whose seasonal repertoire runs from home-cured mackerel with dill, kohlrabi and apple or braised ox cheek with saffron polenta, datterini tomatoes and runner beans to beer-battered fish and triple-cooked chips. “It’s all about the best ingredients, without making things too complex” notes a fan. To finish, the soufflés are “legendary” or you could round off by sharing a tarte Tatin. The ‘kitchen table’ for two is a seductive proposition, and it’s “lovely to see some English wine on the list”, notes one oenophile. Three delightful bedrooms too.
