Pushkar is very far from being a traditional Broad Street balti house. Entrepreneur and ex-MTV VJ Rai Singh has installed chef Bishal Rasaily (formerly of Chutney Mary’s and Mumbai’s Grand Maratha Sheraton) in the kitchen and is determined to ride the wave of interest in ‘new-Indian’ cuisine. The 60-cover restaurant’s bling-tastic white-and-gold interior sets out Singh’s stall – as you enter, digital projections of fish dart around your feet, and the waitresses, selected for their charm, wear clingy outfits that’d put a smile on any rapper’s face. But don’t think this is all style over substance: Rasaily’s food is light and beautifully presented.
