The unofficial UK ambassadors for Peru’s national spirit drink at Islington hotspot Comedor Grill have launched a new late, late lounge for cocktail chasers who prefer the heady pure-grape distillate to its oft-diluted Chilean rivals or have grown weary of Mojitos, Caipirinhas and the other usual South American suspects. Created by José Francisco-Modonese, formerly at similarly pisco-friendly Sushisamba in the City, the Embassy’s dozen-strong list (from £9.50) reflects current trends doing the rounds in his native Lima’s edgier hangouts. Look for Machu Pichu Nights (shiso leaf-infused pisco shaken with lemon juice, red basil syrup, summer berry purée and apple juice), Chicha Sour prepared with purple corn syrup, and Oso Paddington – a citrus tropical cooler named in honour of Peru’s most iconic bear, with orange peel standing in for orange marmalade.
