London.
Alvin Leung does not do things by halves. His self-branded style of cooking, ‘X-treme Chinese’, often challenges diners – his infamous Sex on
the Beach dish resembled a used condom discarded on a patch of sand.
However, for Bo London – the celebrated Hong Kong chef’s first overseas venture, coming to Mayfair in September – Leung is more likely to serve dishes from his two-Michelin-starred restaurant, Bo
Innovation, such as his signature hairy crab soufflé.
‘My aim is to have people say: “That was the best meal I’ve ever had”… so I just work backwards from that,’ he says. Expect big things.
