The sweet smell of steamed milk buns has just wafted a little closer to Soho, with the announcement that Bao on Lexington Street is scheduled to open on 7 April.

Sweet will clash with savoury at Bao, on a menu featuring buns stuffed with braised pork, lamb shoulder or panko-crumbed daikon radish, lubricated by glasses of cool peanut milk. More adventurous parts of the menu are set to include the likes of fried lamb tongues and dark green century eggs (also known as pidan eggs), preserved for months in a clay, ash and calcium oxide mixture.

The family team behind Bao includes Erchen Chang (a Taipei native) and his sisters Shing Tat and Wai Ting Chung (pictured above), with support from siblings Karam, Jyo and Sunaina Sethi – better known as the family team behind our 2014 restaurant of the year Gymkhana. The Sethis (pictured below at Gymkhana) also have success stories Bubbledogs, Kitchen Table and Lyle’s under their belts, making Bao one to watch this Spring.
